Husband Approved Paleo Pumpkin Chocolate Chip Protein Muffins

I recently filmed myself baking a batch of delicious paleo pumpkin muffins. The same soft, cozy, fall-flavored, vibe you would get from any regular recipe but totally free of refined sugar, dairy, or grains. The best part? My husband devoured them unable to tell that they were paleo at all.


I think so many people are afraid to remove things like flour and refined sugar from their diets because they assume it means giving up every treat they love. But truly, you can recreate almost anything paleo-friendly without sacrificing flavor or nostalgia. These muffins are the perfect example... AND they have 6G of protein each!!


Here's the recipe for all of you trying the acne elimination diet (or simply eating clean). One recipe at a time, showing the world that we can eat BETTER than the culture without sacrificing flavor or crowd appeal!!


PALEO PUMPKIN CHOCOLATE CHIP PROTEIN MUFFINS (~6g protein each)

Makes 12 muffins


Dry Ingredients

Wet Ingredients

  • 3 large eggs

  • ½ cup mashed banana (about 1 medium)

  • ½ cup pumpkin purée

  • ¼ cup coconut sugar

  • 2 tbsp maple syrup

  • 1 tsp vanilla


Fold-ins

  • ½ cup chocolate chips (I personally love Hu, Enjoy Life, or making my own!)


INSTRUCTIONS

  1. Preheat oven to 350°F and line a muffin tin.

  2. In a large bowl, whisk all dry ingredients to remove clumps and evenly distribute spices + protein.

  3. In another bowl, whisk eggs, then add mashed banana, pumpkin purée, coconut sugar, maple syrup, and vanilla. Mix until smooth.

  4. Pour wet ingredients into dry and stir until just combined.

  5. Fold in the chocolate chips.

  6. Divide batter into 12 muffin cups (they’ll be about ¾ full).

  7. Bake 18–22 minutes, or until the tops are golden and a toothpick comes out clean.

  8. Cool 10 minutes before removing — protein muffins firm as they cool!


So easy! So YUMMY!!!


Will definitely add better photos one day when I start getting more professional in my clean recipe content haha, but for now this video gives a little bit of the idea.
